Practice makes perfect. I have made by my own hand thousands of gallons of wine since 2005, focusing on:

Technique ... Every varietal, every technique: rosé-style, pressed sweet, pressed at zero, free run, hard pressed, extended maceration, and carbonic maceration.

Fermentation ... Every varietal made with dozens of different yeast strains.

Analysis ... Putting together all the insights learned from the best of the best batches. Add to the equation numerous barrels from various forests, with varying toast levels, made by different coopers from around the world and ... Eureka!

All the wines I tried to mold into something I wanted were never as good as those that made themselves. If you listen, the grapes will tell you what they want to be.
